Today’s vegan protein bar recipe creation was named ‘Momma’s Mojo Bar’.
This fun 13 ingredient creation used a ‘soft & datey’ base along with these main ingredients:
- Date paste
- Peanut butter
- Pea/rice protein
To increase sweetness, maple sugar flakes and Thompson raisins were added. Raisins also add more ‘chewiness’ to each bite.
To increase fiber and add texture, flaxseeds and oats were also added. Flaxseeds also provide a good amount of omega 3 fatty acids.
Walnuts were the sole nut in the ‘Mojo Bar’. They add great flavor and more omega 3’s.
The recipe finishes off with three flavorful additions that work synergistically with each other:
- Vanilla extract
- Sea salt
255g Calories, 12g Fat, 25g Carbohydrates (17g Sugar/4g Fiber), 13g Protein
What to Expect
Sweet, with a dominant date/peanut butter flavor and mild ‘earthiness’. The combination of walnuts, oats, maple sugar flakes, vanilla, cinnamon, and sea salt was well thought out, and won’t disappoint. As far as texture goes, expect only a small amount of crunch and a soft but not overly chewy consistency.
