One of today’s protein bar recipes we made was named ‘Matthew’s Brotein Bar :D’.
This customer wanted a ‘soft & datey’ base, and chose almond butter and whey protein isolate as the main ingredients in addition to date paste.
The following nuts and seeds were added to increase flavor and texture:
- Chia Seeds (fiber, omega 3’s)
To increase the fiber content and boost omega 3 fatty acid levels even further, ground flaxseed powder was also added.
Dried fruit is a nice addition to any bar as it adds a unique flavor. This customer chose the following freeze-dried options:
- Blueberries (sweet and delicious)
- Cranberries (unique tart flavor)
To add some mega crispiness to the recipe, pea protein crisps were another ingredient addition. Pea protein crisps are relatively neutral in terms of flavor, and add additional levels of protein.
The final ingredient added to enhance the overall flavor was vanilla extract.

Flavor Expectations: A sweet bar with dominant date/almond flavors. A hint of blueberry, and tart cranberry.
Texture Expectations: Soft, but not overly chewy. Plenty of crispy crunch!
