Today we made a ‘soft & datey’ protein bar recipe that was named ‘Denise’. This creation was a ‘gourmet’ bar that used the following base ingredients:
- Medjool dates
- Almond butter
- Sunflower seed butter
- Cashew butter
- Coconut flour
Since the customer decided to use coconut flour instead of a protein powder in this recipe, the protein content of this will be lower than average.
The two nuts and seeds added to this recipe were almonds and chia seeds. Both add a little crunch as well as some nutrients.
Cacao nibs and sea salt were selected under the ‘flavor & texture enhancers’. Although a little bitter on their own, they provide a very nice mild chocolate flavor when combined with sweet ingredients like dates. They also provide a notable crunch.
Under the ‘dried fruit’ section, the customer went with sour cherries and goji berries.
There were three ‘boosters’ added to this recipe:
- Cacao (chocolate flavor, nice when combined with cacao nibs)
- Cinnamon (excellent source of antioxidants, notable/distinct ‘warm’ flavor
- Ginger (helps with digestion, notable/distinct ‘warm’ flavor

What to Expect
A mildly sweet datey/nutty/seedy dominant flavor. You’ll most definitely taste the sunflower seed butter in this one. Some ‘warmth’ and noticeable flavor contributed by the cinnamon and ginger combination. The sour cherries will provide some tartness and chewiness (along with the goji berries). In terms of overall texture, decent levels of crunch should be expected.
