Today we made a gourmet protein bar recipe that the customer named ‘Coconut Wheatgrass’.
The ‘gourmet’ bars offer more ingredient options than our ‘original’ bars, and in this wild concoction the customer took full advantage of that by choosing 19 in total!
For the base of their recipe, they chose these ingredients:
- Cashew butter
- Maple pecan butter
- Coconut nectar
- Coconut flour
- Egg white protein
- Vegan protein blend
To help the bar live up to it’s name, in addition to coconut flour and coconut nectar the customer also selected toasted coconut, coconut mana (AKA coconut butter), and coconut oil. Lot’s of coconut indeed!
The following nuts/seeds/dried fruit were added:
- Poppy seeds (calcium)
- Pumpkin seeds (zinc)
- Cranberries (tart flavor)
- Strawberries (sweet flavor, vitamin C)
To boost the nutrition levels of ‘Coconut Wheatgrass’, chia powder and collagen peptides, and… you guessed it–wheatgrass were added!
Chia not only contains high levels of fiber, but also is an excellent source of omega 3 fatty acids. Collagen peptides help boost the protein levels of this recipe by about 1 gram per bar. Wheatgrass contains chlorophyll and a host of other great stuff that you’d expect in a plant powder.
Sea salt was the final addition to this unique recipe.

Our Thoughts on Flavor & Texture
Expect a sweet coconut flavor mixed with a cashew/maple pecan nuttiness. Cranberries will provide a little tartness in some bites. The texture will be soft, chewy, and a small amount of pumpkinseed crunch.
